Prepare Oysters

Shuck
Preheat oven to 450°F (230°C). Spread the coarse salt in a single layer on a rimmed baking sheet large enough to hold 12 oyster halves. Shuck oysters, reserving their liquor, and place each oyster in its half shell on the salt bed so they sit level and steady. If you prefer, use rock salt or crumpled foil to stabilize shells.

Gently loosen the oyster from the shell if needed but leave it in the half shell with its liquor. Keep on the baking sheet and set aside while you make the topping.
Make Topping Base

In a medium skillet over medium heat, melt 4 tbs unsalted butter. Add the finely minced shallot and sauté 2–3 minutes until softened and translucent but not browned.

Add the minced garlic and cook 30–45 seconds until fragrant. Add the chopped, drained spinach and chopped artichoke hearts. Cook, stirring, 2–3 minutes to warm through and drive off excess moisture. If mixture seems wet, cook a little longer to evaporate liquid but avoid browning.

Pour in the 2 tbs white wine (or chicken stock) and 1 tsp Worcestershire sauce; cook 1–2 minutes to reduce. Stir in the chopped cooked bacon and chopped parsley. Remove skillet from heat and stir in the grated Asiago, lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper. Taste and adjust seasoning — add a pinch more salt or a dash of hot sauce if desired.

Allow the topping mixture to cool slightly so it firms up and is easier to mound onto oysters (about 5 minutes). If the mixture seems too loose, stir in 1–2 tbs additional breadcrumbs to tighten it.
Prepare Breadcrumb Topping

In a small bowl, combine 3/4 cup fresh breadcrumbs with 2 tbs melted butter, 2 tbs grated Asiago, and optional 1 tsp hot sauce. Stir until crumbs are evenly moistened. This will create a crunchy finishing crust.
Assemble & Bake

Spoon about 1 to 1 1/2 tablespoons of the spinach–Asiago–artichoke mixture over each oyster, spreading to cover the oyster and some of the shell rim. The goal is a generous mound that will form the classic Rockefeller cap.

Lightly sprinkle the breadcrumb mixture over the top of each filled oyster, pressing gently so crumbs adhere to the topping.

Place the baking sheet in the preheated 450°F (230°C) oven on the middle rack. Bake 8–10 minutes, until the topping is bubbling and the breadcrumbs are golden brown. If you prefer a more browned crust, finish under the broiler for 1–2 minutes — watch closely to avoid burning.
