    Preheat

    Preheat your oven to 425°F (220°C). If you have a pizza stone, place it in the oven to heat; otherwise use a baking sheet.

    Brush both sides of each flatbread with 1 tablespoon olive oil. Place on a baking sheet (or directly on the pizza stone) and bake 3–5 minutes until just warmed and slightly crisp around the edges. Watch carefully to avoid over-browning.

    Remove warm flatbreads from oven. Rub the cut side of the halved garlic clove over the surface of each flatbread to infuse a light garlic flavor.

    Season lightly with 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper distributed between the two flatbreads.

Tomato Topping

    Prepare tomatoes: core and seed large heirloom tomatoes if desired, then chop into roughly 1/2-inch pieces. If using cherry tomatoes, quarter them. Measure about 2 cups total.

    In a medium bowl combine chopped heirloom tomatoes, cherry tomatoes (if using), finely minced shallot, 1 tablespoon extra-virgin olive oil, 1 tablespoon fresh lemon juice, 1/2 teaspoon sea salt, 1/4 teaspoon black pepper and 1/2 cup of thinly sliced basil. Gently toss to combine. Taste and adjust seasoning.

    Let the mixture sit for 5–10 minutes at room temperature to allow flavors to meld and for some juices to accumulate. If mixture becomes too watery, drain off excess liquid before assembling to avoid soggy flatbread.

Cheese & Pesto

    Tear or slice the fresh mozzarella into rounds or irregular pieces (about 8 oz total). Pat lightly with paper towel if very moist to prevent excess moisture on the flatbread.

    Spread about 2 tablespoons of basil pesto evenly over each warm flatbread, leaving a 1/2-inch border at the edges. The pesto acts as the base layer and seasoning.

    Distribute the torn mozzarella evenly across both flatbreads on top of the pesto. If you prefer melted cheese, return the assembled flatbreads briefly to the oven (about 3–4 minutes) until cheese softens but does not brown excessively. For a fresher bruschetta style, skip this step and proceed to topping with tomato mixture raw.

Assembling & Balsamic Reduction

    Spoon the prepared tomato-basil mixture evenly over the mozzarella-topped flatbreads, mounding slightly in the center but avoiding overloading so the flatbread remains crisp.

    Make the balsamic reduction: in a small saucepan combine 1/2 cup balsamic vinegar and 1 teaspoon granulated sugar. Bring to a gentle simmer over medium-low heat, then reduce heat to maintain a slow simmer. Cook until liquid has thickened to a syrupy consistency and coats the back of a spoon, about 8–12 minutes. Watch closely to prevent burning. Remove from heat and let cool slightly; it will thicken further as it cools.

    Drizzle 1–2 teaspoons (or to taste) of the balsamic reduction over each assembled flatbread. Taste and add more if desired — the reduction should be sweet-tart and glossy.

    Scatter fresh basil leaves across the flatbreads and finish with a light sprinkle of flaky sea salt.

Serving

    Using a sharp knife or pizza cutter, slice each flatbread into 6–8 wedges. Serve immediately while flatbread is still slightly warm and the flavors are fresh.

    Leftover balsamic reduction can be refrigerated for up to 2 weeks. Store assembled flatbread separately (tomato mixture refrigerated) and reheat flatbread base briefly before assembling if making ahead.
