Prepare the Pork Chops

Preheat your grill or skillet over medium-high heat. Rub the pork chops with olive oil, salt, black pepper, and fresh thyme. Let them rest at room temperature for 15 minutes.

Cook the Pork Chops

Sear the pork chops on the grill or skillet for about 4-5 minutes on each side until they reach an internal temperature of 145°F (63°C). Remove from heat and let them rest for 5 minutes before serving.

Cook the Sweet Potatoes

In a large pot, boil the sweet potatoes until tender, about 10-15 minutes. Drain and return to the pot.

Make the Glaze

Add maple syrup, butter, cinnamon, and salt to the sweet potatoes. Mash until smooth and well combined.

Collards and Smoked Sausage

Sauté the Sausage

In a large skillet, heat olive oil over medium heat. Add the smoked sausage and cook until browned, about 5 minutes. Remove from skillet and set aside.

Sauté the Vegetables

In the same skillet, add chopped onion and minced garlic. Sauté until softened, about 3 minutes.

Cook the Collards

Add collard greens to the skillet along with chicken broth, salt, and black pepper. Cook for 10-15 minutes until the collards are tender. Stir in the sausage before serving.
