Chill glass

Place a chilled Old Fashioned glass in the freezer or fill it with ice and cold water while you prepare the cocktail to ensure the drink stays cool without diluting quickly.

Measure and combine

In a mixing glass or large stirring beaker, add 2 oz aged dark rum, 0.75 oz sweet vermouth, 0.5 oz Averna (or chosen amaro), 0.25 oz Luxardo maraschino, 0.25 oz allspice dram, 0.25 oz simple syrup, 2 dashes Angostura bitters and 1 dash orange bitters.

Add ice and stir

Add three large ice cubes to the mixing glass. Using a bar spoon, stir briskly but smoothly for 20–30 seconds (about 20–30 full rotations) until the mixture is well chilled, slightly viscous, and the outside of the mixing glass is frosty — the target dilution is roughly 20–25% by volume for a spirit-forward stirred cocktail.

Prepare serving glass

Discard the chilling ice/water from the Old Fashioned glass if used. Place one large clear ice cube into the glass.

Strain

Double-strain (use a Hawthorne or julep strainer and a fine mesh if you want zero small bits) the stirred cocktail into the prepared glass over the single large ice cube, pouring slowly to preserve the temperature and minimize excess splashing.

Float demerara rum

Using the back of a bar spoon held just above the surface of the drink, gently pour 0.25 oz demerara or dark brown rum so it floats on top, adding aromatic sheen and a hint of raw sugar character.

Garnish and finish

Express an orange peel over the drink by holding the peel skin-side down above the glass and giving it a firm twist to release oils; optionally rub the rim with the peel and drop it in. Lightly grate a small amount of fresh nutmeg over the surface (to taste). Optionally add one Luxardo cherry on a pick. Serve immediately.

Tasting notes

Sip slowly. The cocktail should be rich and robust: dark rum backbone, herbaceous-sweet from vermouth and amaro, warm spice from allspice dram and nutmeg, and a glossy demerara float adding complexity and aroma.
