Inspect and chill

Check each oyster to ensure shells are closed; discard any that are open or cracked. Rinse oysters briefly under cold running water to remove surface debris. Place crushed ice or a bed of rock salt on a serving platter to steady oysters and keep them very cold.

Shuck oysters

Hold an oyster with the hinge toward you and protect your hand with a thick glove or folded kitchen towel. Insert the tip of the oyster knife into the hinge and twist gently until it pops. Run the knife along the top shell to sever the muscle and remove the top shell. Tilt the oyster to drain any excess liquid, then slide the knife under the oyster meat to free it from the bottom shell while keeping the natural liquor (briny liquid) in the shell. Arrange the shucked oysters on the ice bed, one per shell, keeping them level so they don't spill.

East Coast (Mignonette) Condiment

Combine the red wine vinegar and minced shallot in a small bowl. Add the freshly ground black pepper and optional sugar, then stir to dissolve. Let the mixture rest for at least 5 minutes so the shallot softens and flavors meld. Taste and adjust acidity or pepper as desired. Spoon a small amount (about 1/2 tsp) onto each oyster when serving.

West Coast (Citrus & Hot) Condiment

In a small ramekin, mix the lemon and lime juices with the hot sauce and chopped cilantro (if using). Taste and adjust heat or acidity. Serve in a small bowl so guests can drizzle about 1/2 tsp over each oyster or squeeze lemon wedges directly.

Mix-It-Up / Garnishes

Arrange cocktail sauce and prepared horseradish in small bowls on the serving platter. Cut lemon into wedges. Offer parsley sprigs for garnish. Let guests choose: a classic East Coast bite (mignonette), a West Coast citrus-spicy bite, or mix flavors by adding a touch of cocktail sauce or horseradish. If combining, add sparingly so the oyster's flavor remains primary.

Keep oysters chilled until the moment of shucking and serving. Use the oyster knife and protective glove/towel for safe shucking. Discard any oysters that have an off odor or that do not close before shucking. Consume raw oysters immediately; do not refreeze or store raw shucked oysters for later service.
