Prepare the ham
Bring the Jamon Iberico to room temperature: remove from refrigerator 1–2 hours before slicing. This allows fat to soften and flavor to bloom.
Mount the ham
Secure the Jamon in a jamonero (ham holder) with the hoof pointing upward if you plan to serve over several days, or horizontal if slicing for immediate service. Make sure the leg is stable and the surface to be sliced is clean and facing you.
Initial trimming
Use a small sharp knife to remove the outer hard rind and thick yellowed fat only from the area you will slice. Leave a thin layer of fat on the meat — this carries flavor. Save trimmed fat pieces to rub on the exposed meat between slicing to keep it from drying.
Slicing technique
Using a long, flexible jamon knife, slice thin, almost translucent slivers starting from the top of the mounted area working toward you. Keep each slice small (about 3–4 cm wide) and as thin as possible to maximize tenderness and mouthfeel. Cut parallel to the bone; when you reach bone obstructions, use the paring knife to carefully cut around them and switch orientation as needed.
Portioning and presentation
Arrange slices in loose, overlapping folds on a platter at room temperature. Place the fattier, more marbled slices first (they will be shinier) and leaner slices after. If not all the ham will be consumed immediately, cover exposed meat with the reserved fat pieces and a clean cloth to prevent drying; store at cool room temperature or in the refrigerator wrapped in breathable paper for short term.

Arrange cheese and nuts
Slice the manchego thinly and fan on the serving board next to the Jamon. Scatter toasted Marcona almonds in small bowls or on the platter.
Add pickles and olives
Place cornichons, guindilla peppers, and olives in small dishes to provide briny contrast to the rich ham.
Seasoning and garnishes
Small dabs of quince paste or halved fresh figs add sweetness; drizzle a little extra-virgin olive oil over bread if using. Finish any cheese or bread with a light crack of black pepper to taste.
Service & Storage
Serve the Jamon Iberico at room temperature alongside accompaniments. Encourage guests to take thin slices and pair with small bites of bread, cheese, nuts, and pickles. For leftovers, re-cover the exposed ham with reserved fat, wrap loosely in breathable paper or a clean cloth, and refrigerate. Before serving again, allow to come back to room temperature (about 30–60 minutes) and re-slice fresh slices as needed.
