Blend base

Drain and rinse the canned chickpeas. Reserve 2–3 tablespoons of the drained liquid. In a food processor combine chickpeas, tahini, lemon juice, garlic cloves, cumin and kosher salt. Pulse to combine, then run the processor while slowly streaming in 3 tablespoons olive oil and 3 tablespoons ice water until very smooth (about 1–2 minutes). If mixture is too thick, add reserved chickpea liquid 1 tablespoon at a time until desired creamy consistency is reached.

Taste and adjust seasoning with more lemon, salt, or cumin as needed. Transfer hummus to a shallow serving bowl and use the back of a spoon to create a small well in the center for toppings.

Pickled Tomato Topping

While hummus rests, place the halved tomatoes in a small bowl. Add vinegar, sugar, 1/4 tsp kosher salt and black pepper. Toss gently and let sit for at least 10 minutes (can be made up to 1 hour ahead) so tomatoes soften and lightly pickle.

Crunch & Brine Accents

Combine sliced cornichons, minced shallot, and halved olives in a small bowl. Fold in chopped parsley and dill. Taste and adjust — if you want more brightness add a squeeze of lemon (about 1/2 tsp juice). This mixture provides salty, tangy crunch that will be scattered over the hummus.

Assemble: Spoon the pickled tomatoes over one side of the hummus well and scatter the cornichon–olive–shallot mixture over another area so there are distinct flavor pockets. Sprinkle smoked paprika across the top, drizzle 2 tablespoons extra-virgin olive oil over everything, and finish with remaining chopped herbs.

Serve immediately with toasted pita wedges and lemon wedges on the side. Leftover hummus will keep airtight in the refrigerator for up to 4 days; toppings are best consumed the same day.
