Temper and slice cheeses

Remove Gruyère and cheddar from refrigeration 20–30 minutes before serving so they come to near room temperature. This improves aroma and texture. While tempering, using a sharp cheese knife, slice the Gruyère into 1/4-inch (6 mm) thick slices or 1/2-inch (12 mm) triangular wedges. Cut the sharp cheddar into 1/4-inch slices or small cubes—present variety of shapes for a composed board.

Butter and truffle lift

Gently soften 1 tablespoon unsalted butter (leave at room temperature or microwave in 3–5 second bursts until spreadable). Finely mince or thinly shave about 0.5 oz fresh or preserved black truffle. In a small bowl combine softened butter and half the shaved truffle; stir until evenly distributed. This creates a truffle butter to enhance the cheeses' mouthfeel and aroma.

Finish cheeses

Using a small offset spatula or butter knife, lightly smear a thin layer of the truffle butter over a few slices of Gruyère and cheddar (reserve some butter for toasts). Arrange the remaining plain and buttered slices on the board, alternating cheeses to balance flavor and color.

Prepare toasts: Lightly brush baguette slices with 1 teaspoon extra virgin olive oil and toast in a 375°F (190°C) oven for 6–8 minutes until golden and crisp. If you prefer, use a skillet over medium heat, about 1–2 minutes per side, to toast.

Plate the board: On a serving board or platter, place the arranged cheeses (both plain and truffle-buttered). Fan the toasted baguette slices alongside the cheeses. Spoon a small pool of the remaining truffle shavings onto the board or place them gently on top of several cheese slices for visual impact and aroma.

Add small accents: Scatter 1 teaspoon honey in a small dish or lightly drizzle a thin line across a few cheddar slices for a sweet contrast. Sprinkle the lemon zest very lightly over Gruyère slices to add brightness. Dot the remaining truffle butter on a few toasts so guests can spread it.

Season and finish: Lightly sprinkle 1/4 teaspoon sea salt flakes and 1/8 teaspoon freshly ground black pepper across the board—focus on the buttered slices and toasts to enhance the truffle flavor. Add 1 tablespoon snipped chives over the cheeses for a fresh herb note. Place the optional cornichons or olives in a small ramekin on the board to offer acidity and contrast.

Final aroma boost: Immediately before serving, shave a few more thin pieces of truffle over the cheeses (if using fresh) so the aroma is pronounced. Serve at once so the black truffle's perfume and the cheeses' nuanced flavors are at their peak.
