Prepare glass

Choose a large wine glass (or a rocks glass if preferred). Fill the glass about two-thirds full with large ice cubes (approximately 4–6 cubes). The large cubes keep the drink colder with less dilution.

Add Aperol

Pour 2 oz Aperol over the ice. Tilting the glass slightly helps prevent splashing and keeps the layers gentle.

Add Prosecco

Slowly pour 3 oz chilled prosecco into the glass. Pouring onto the side of the glass or over the back of a spoon will help preserve some of the effervescence and maintain an attractive layered appearance.

Top with soda

Add 1 oz chilled club soda to the top of the glass to brighten the cocktail and adjust the strength. If you prefer a drier or more bitter spritz, reduce soda to 0.5 oz; for a lighter drink, increase to 1.5 oz.

Stir gently

Using a bar spoon, give the drink one or two gentle stirrings to integrate the Aperol, prosecco, and soda without flattening the bubbles.

Garnish and serve

Garnish with 1 fresh orange slice: place it on the rim or slide into the glass. Serve immediately while chilled and fizzy.

Optional substitutions

If you don't have prosecco, use an equal volume of another dry chilled sparkling wine. Adjust Aperol and soda ratio to taste, keeping the general 3:2:1 (Prosecco:Aperol:Soda) balance for a 'Tutto Bene' Spritz.
