Clean oysters

Rinse the Sydney Rock oysters under cold running water to remove sand and grit. Use a small brush if needed to scrub the shells. Discard any oysters with cracked shells or off odors.

Chill serving bed

Fill a large shallow serving platter or tray with the ice and sprinkle the sea salt over the ice. This helps stabilize oysters and keeps them very cold while serving.

Make malt vinegar mignonette & condiments

Classic malt vinegar

Pour the malt vinegar into a small serving bowl. Place the bowl on the ice bed so guests can drizzle vinegar directly on oysters if preferred. Keep chilled.

Malt vinegar mignonette (optional, shallot mignonette variant)

In a small bowl combine the minced shallot, malt vinegar and red wine vinegar (if using), sugar and cracked black pepper. Stir to dissolve the sugar and let sit for at least 10 minutes for flavors to marry. Taste and adjust: add a few drops of Tabasco if you want heat. Chill until ready to serve.

Lemon wedges

Cut lemons into wedges and transfer to a small bowl or directly onto the ice bed near the oysters.

Safety and positioning

Place an oyster flat-side up on the towel or hold it with a gloved hand. The hinge (pointed end) should face you. Use the towel to protect your hand and prevent slipping.

Insert the knife

Insert the tip of the oyster knife into the hinge. Twist the knife with a gentle but firm pressure until you feel the hinge pop. Do not force violently — work patiently to avoid shell fragments.

Cut the adductor

Slide the knife along the top shell to cut the adductor muscle and separate the top shell. Discard the top shell. Run the blade under the oyster to cut the bottom adductor so the oyster sits loose in the shell. Keep the oyster level to retain the liquor (natural juices).

Check and clean

Inspect for any bits of shell; remove them with the knife tip. If there is excess grit, rinse quickly with a small spoonful of cold water and pour off. Place the shucked oyster on the prepared ice bed so it sits stably in its half shell.

Plate

Arrange the oysters evenly over the salt-studded ice bed so they’re level and won’t tip. Place the bowl of plain malt vinegar, the mignonette, lemon wedges and a small bowl for discarded shells or garlic if used, on the platter.

How to serve

Serve immediately while oysters are cold and fresh. Encourage guests to add a small drizzle of malt vinegar or a spoonful of the malt mignonette, or a squeeze of lemon. Offer cracked black pepper or hot sauce to taste.

Consume oysters promptly. Keep them chilled and discard any that were open before shucking or smell off. Limit to freshest supply and avoid serving to people with compromised immune systems.
