Strawberry Granita

Make simple strawberry purée

Place the quartered strawberries, sugar, lemon juice, water, and a pinch of salt in a blender or food processor. Purée until completely smooth, about 30–45 seconds. Taste and adjust sweetness or lemon if needed.

Strain the purée through a fine-mesh sieve into a shallow metal or glass baking dish (approximately 9x9 inch or similar) to remove seeds and ensure a smooth granita. Press solids with the back of a spoon; discard solids.

Cover the dish loosely and chill in the freezer for 45 minutes to 1 hour until edges begin to freeze. Every 30 minutes, use a fork to scrape and rake the frozen edges toward the center, breaking up ice crystals. Repeat scraping every 20–30 minutes for 2–3 cycles (total freeze time about 2–3 hours) until the granita is fully crystalline and fluffy. Transfer finished granita to the coldest part of the freezer until serving.

Poached Rhubarb

Combine the water, sugar, orange juice, and orange zest in a medium saucepan. Split the vanilla pod, scrape the seeds into the pan and add the pod (or add 1/2 tsp vanilla extract if using). Bring the mixture to a gentle simmer over medium heat, stirring to dissolve sugar.

Add the rhubarb pieces to the simmering poaching liquid. Reduce heat to low so the liquid is at a bare simmer. Poach the rhubarb gently for 6–10 minutes, depending on thickness: it should be tender but still hold its shape (not mushy). Stir gently once or twice to ensure even cooking.

Remove the pan from the heat. Using a slotted spoon, transfer the rhubarb to a bowl to cool. If you prefer poaching syrup for serving, simmer the remaining liquid briefly to concentrate it slightly, then cool. Discard vanilla pod. Chill rhubarb and syrup in the refrigerator until ready to serve.

Sake Cream

Chill a mixing bowl and beaters in the freezer for 10–15 minutes to help the cream whip well. If using mascarpone, soften it slightly at room temperature for 10 minutes so it blends smoothly.

Pour the heavy cream into the chilled bowl. Add mascarpone (if using), icing sugar, lemon zest, pinch of salt, and the sake. Begin whipping on medium speed until soft peaks just form—do not overwhip. The sake will flavor and slightly loosen the cream; adjust texture by shortening or lengthening whipping time. Taste and add up to 1 tsp more icing sugar if you want it sweeter.

Cover and refrigerate the sake cream until ready to assemble. It should be pipeable or spoonable but still light.

Assembly & Service

Spoon or fluff the strawberry granita into chilled serving glasses or bowls, filling each about two-thirds. Spoon 2–3 pieces of poached rhubarb and a little poaching syrup over the granita in each glass.

Top each serving with a generous dollop (about 2 tablespoons) of sake cream. Garnish with fresh mint leaves, a few extra sliced strawberries, and a sprinkle of toasted sliced almonds for texture.

Serve immediately so the granita remains crystalline. If you need to hold the dessert briefly, keep granita in the freezer and add rhubarb and sake cream just before serving.
