Chill glass

Place an old-fashioned glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to slightly chill the glass.

Measure and pour

Add 2 oz The Dalmore 12 Year Old (Sherry Cask Finish) and 1 oz Peach Leaf Amaretto into a mixing glass or shaker filled with plenty of ice.

Add bitters and sweetener

Add 2 dashes of Angostura bitters. If you prefer a touch more sweetness or to balance stronger spirits, add 1/4 teaspoon of simple syrup (optional).

Stir

Stir the mixture briskly with a bar spoon for 20–30 seconds (about 20–30 full spoon rotations) until well chilled and slightly diluted. If you used a shaker, stirring is preferable for spirit-forward cocktails, but you may briefly shake (5–7 seconds) if no mixing glass is available.

Prepare glass

Discard the ice water from the chilled glass and add a large ice cube (or several fresh ice cubes).

Strain

Double-strain or fine-strain the stirred cocktail from the mixing glass into the prepared old-fashioned glass over the large ice cube.

Garnish and finish

Express the oils of an orange peel over the drink by holding the peel over the glass with the outer skin facing down and giving it a firm squeeze to release the oils. Rub the peel around the rim if desired, then drop it into the drink as garnish.

Serve

Serve immediately. Sip slowly to appreciate the sherry cask, almond-peach amaretto notes, and bitters integration.
