Prepare glass

If desired, moisten the rim of a tall highball or Collins glass with the lemon wedge and dip the rim into coarse salt or celery salt to coat. Fill the glass with large ice cubes and set aside.

Combine ingredients

In a mixing glass or cocktail shaker filled with ice, add 2 oz Ketel One vodka, 4 oz tomato juice, 1 oz Bloody Mary mix, 0.5 oz fresh lemon juice, and 0.25 oz fino sherry.

Season

Add 3 tsp Worcestershire sauce, 0.5 tsp prepared horseradish, 3 dashes hot sauce, 1 tsp celery salt, and 1 tsp freshly ground black pepper to the mixing glass.

Mix

Stir the mixture vigorously with a long bar spoon for 20–30 seconds (or roll between two tins). Do not shake — stirring preserves texture and clarity while properly chilling and diluting the drink.

Taste and adjust

Taste a small sip (or spoon) and adjust seasoning as needed: add more hot sauce for heat, more Worcestershire for umami, or a splash more lemon for brightness. If too intense, add up to 1 oz more tomato juice.

Finish and serve

Strain (or pour) the cocktail into the prepared glass over the ice. Float the 0.25 oz of fino sherry gently on top by pouring it over the back of a spoon so the sherry sits briefly on the surface for aroma.

Garnish

Garnish the drink with a celery stalk and a lemon wedge on the rim. Skewer an olive or pickled green bean and rest it across the glass or on the garnish pick. Serve immediately with a straw or stirrer.
