Prepare bitter leaves
Wash the bitter leaves thoroughly in several changes of cold water to remove dirt. If leaves are very bitter and large, trim out thick stems and roughly chop to bite-size pieces (about 1" pieces). Place leaves in a large bowl.
Blanch (optional to reduce bitterness)
To soften and mellow the bitterness slightly, bring a pot of water to a rolling boil, add a pinch of salt, and blanch the leaves for 20–30 seconds. Immediately transfer leaves to an ice bath to stop cooking. Drain well and squeeze gently to remove excess water. Note: skip blanching if you prefer maximum bitterness and crunch.
Prepare vegetables
Core and dice the tomato into 3/4" pieces (about 1 cup). Peel and halve the cucumber lengthwise, scoop seeds if watery, and slice into 1/4" half-moons (about 1/2 cup). Thinly slice the red onion into half-moons and separate into rings (about 1/4 cup). If using scotch bonnet, finely mince and remove seeds for less heat; use gloves if preferred.
Assemble salad base
In a large bowl, combine the prepared bitter leaves, diced tomato, cucumber slices, and red onion. Add the optional sliced or quartered boiled egg and toasted peanuts or melon seeds if using.
Season
Sprinkle 1/2 tsp salt and 1/4 tsp freshly ground black pepper evenly over the salad and toss gently to distribute before adding the dressing.

Combine dressing ingredients
In a small bowl or jar, whisk together 1/2 cup mayonnaise, 1/4 cup plain yogurt (or buttermilk), 1 tbsp fresh lemon juice, 1 tsp apple cider vinegar, 1 tsp honey, 1/2 tsp Dijon mustard, 1 tsp olive oil, and 1/2 tsp minced garlic until smooth.
Chill (optional)
If time allows, refrigerate the dressing for 10–15 minutes to let flavors meld.
Finish & serve
Dress the salad: Pour about half the salad cream over the salad and toss gently to coat. Add more dressing to taste — typically 3–4 tbsp (about half the prepared dressing) for 4 cups leaves, reserving any extra for guests or future use.
Serve immediately: Serve the salad immediately for best texture. Leftover dressing can be refrigerated in a sealed container for up to 3 days.
