Prep

Rinse rice

Place the rice in a fine-mesh sieve or bowl and rinse under cold water, swirling with your hand, until the water runs nearly clear (about 2–3 minutes). Drain thoroughly. This removes excess surface starch and prevents gummy rice.

If using saffron: place the saffron threads in 1 tablespoon hot water or 1 tablespoon warm broth to bloom while you prepare other ingredients (about 5–10 minutes).

Measure liquids, spices, and chop the onion and mince the garlic so everything is ready to go.

Cook aromatics & toast rice

Heat fat

In a medium saucepan (with a tight-fitting lid) heat the butter or oil over medium heat until shimmering.

Sauté aromatics

Add the diced onion and a pinch of salt. Sauté until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

Add the rinsed, drained rice to the pan. Stir frequently and cook for 1½–2 minutes so the rice gets coated in fat and begins to toast lightly. Toasting improves texture and flavor.

Stir in the ground turmeric, ground cumin, sweet paprika, and bay leaf until the rice is evenly colored and fragrant (about 30 seconds). If using bloomed saffron, add the saffron and its soaking liquid now; if using saffron threads dry, crumble them between your fingers and add them.

Pour in the measured water and the 1/2 cup broth. Stir once to combine and scrape up any browned bits from the bottom. Add the kosher salt and black pepper. Bring the mixture to a gentle boil over medium-high heat.

Simmer & rest

Once boiling, reduce the heat to low so the liquid is at a low simmer. Cover the saucepan with the lid and cook undisturbed for 15–18 minutes, or until the rice has absorbed the liquid and is tender. Avoid lifting the lid during this time.

After 15–18 minutes, remove the pan from the heat and keep it covered. Let the rice steam and rest for 8–10 minutes. This finishing steam ensures separate, fluffy grains.

Finish & serve

Fluff rice

Remove the lid, discard the bay leaf, and gently fluff the rice with a fork to separate the grains.

Taste and adjust seasoning with additional salt or pepper if needed. Stir in the optional lemon juice for brightness and sprinkle chopped cilantro or parsley over the top as garnish.

Serve warm as a side (serves 4). Yellow rice pairs well with grilled meats, stews, beans, or vegetables.
