Method

Preparing the whole chicken

Inspect and dry

Remove any giblets from the cavity and pat the outside and cavity of the chicken thoroughly dry with paper towels. Dry skin crisps better and helps seasoning stick.

Truss for roasting (if leaving whole)

If you plan to roast the chicken whole, tuck wing tips under the back and tie the legs together with kitchen twine. This produces even cooking and tidy presentation. If deboning (see next section), skip trussing.

Season the exterior

In a small bowl combine salt, pepper, smoked paprika, ground cumin and garlic powder. Rub the olive oil all over the chicken skin and under the skin where possible (use your fingers to loosen skin over the breast). Rub the spice mix evenly over the skin and inside the cavity. Cut the lemon in half and place the halves and the thyme/rosemary sprigs inside the cavity for aroma.

Place the chicken breast-side up on a large cutting board. Have a sharp boning or chef's knife and kitchen shears ready. Keep paper towels close to grip the slippery skin.

Using kitchen shears, cut along both sides of the backbone from tail to neck and remove it (reserve for stock if desired). Open the chicken like a book and press to flatten slightly.

With the chicken skin side up, use the tip of the knife to follow and cut along the breastbone and wishbone to separate meat from the bone. Work slowly and keep the blade close to the bones to avoid removing excess meat.

Turn the bird over, locate thigh joints and cut through the skin and connective tissue to free the leg quarters from the carcass while keeping the meat attached as much as possible. Continue working the knife to free bones while keeping the overall shape intact.

Continue cutting and scraping along the backbone area and inside the cavities to remove ribs and wishbone. Use short strokes. The goal is a mostly boneless carcass with skin intact—reserve bones for stock.

Run your fingers across the meat to feel for any remaining small bones or cartilage and remove them with tweezers or the tip of the knife.

Trim excess fat and shape the deboned bird into a uniform thickness for even cooking. If you wish to roll and tie the bird later (as a stuffed roulade), flatten it gently with your palms and keep the skin continuous where possible.

Applying compound butter or stuffing (if deboned)

Make compound butter

Combine softened butter, minced garlic, chopped parsley, breadcrumbs (if using) and lemon zest in a small bowl. Season lightly with a pinch of salt and pepper. Mix until homogeneous.

Spread under skin and inside cavity

Gently loosen the skin over the breasts and spread about two-thirds of the compound butter directly onto the meat beneath the skin to flavor the breast. Spread the remaining butter across the skin and inside the cavity. If adding a stuffing, place it evenly in the cavity or on the flattened bird.

Roll and tie (optional)

If you deboned to make a roulade, carefully roll the bird so the skin encases the filling and meat. Tie every 2–3 inches with kitchen twine to secure. If leaving flattened, bring edges together and tie to hold shape for even cooking.

Roasting and finishing

Preheat oven

Preheat the oven to 200°C (400°F). Position a rack in the center of the oven. Place a roasting pan or ovenproof skillet on the rack and allow it to warm slightly for even browning.

Sear (optional)

For extra color, heat a couple of tablespoons of olive oil in a heavy skillet over medium-high heat. Sear the outside of the deboned bird (skin side down first) for 2–3 minutes until golden. This step is optional if roasting a whole trussed bird.

Roast

Place the chicken (whole/trussed or deboned roulade) breast-side up in the roasting pan. Pour chicken stock and optional white wine into the pan (not over the skin) and add honey to the liquid. Roast for about 50–70 minutes for a 1.8–2.0 kg whole bird; a deboned, rolled bird of similar weight will take 40–55 minutes. Roast until an instant-read thermometer inserted into the thickest part of the breast and thigh reads 74°C (165°F). Baste once or twice with pan juices during roasting for extra gloss.

Rest

Remove the chicken from the oven and transfer to a carving board. Tent loosely with foil and rest for 15–20 minutes. Resting allows juices to redistribute and makes carving or slicing easier.

Make pan sauce

While the bird rests, place the roasting pan over medium heat on the stovetop (be careful—use an oven mitt). Add a splash more stock or wine if pan is dry. Scrape up browned bits and simmer briefly until slightly reduced. Taste and finish with a small knob of butter or an extra teaspoon of honey if desired. Strain if a smooth sauce is preferred.

Carving and serving

For whole/trussed chicken

Remove twine if used. Carve by slicing between joints: remove legs and thighs, then wings, then slice breast meat across the grain in even slices. Arrange on a platter and spoon pan sauce over pieces or serve on the side.

For deboned roulade

Remove twine and slice crosswise into 1–1.5 cm (3/4 inch) thick slices to show spiral of stuffing and meat. Serve warm with pan sauce.

Garnish

Garnish with additional fresh herbs and lemon wedges. Serve with roasted vegetables, rice, or flatbreads as desired.
