Prepare Simple Syrup (if needed)
If you don't have ready simple syrup, make 1 cup by combining 1/2 cup granulated sugar with 1/2 cup water in a small saucepan. Heat gently, stirring until the sugar dissolves. Remove from heat and cool to warm or room temperature.
In a medium mixing bowl or pitcher, combine the date syrup (3 tablespoons) with 1 cup of the simple syrup or warm water. Whisk until fully integrated and smooth. The mixture should be pourable but richly colored.
Add 1 teaspoon rose water, 1 teaspoon orange blossom water (optional), and 1 teaspoon fresh lemon juice to the date mixture. Stir well and taste. Adjust acidity with up to another 1/2 teaspoon lemon juice if the mixture tastes overly sweet or heavy.
If you prefer a slightly thinner jallab, add up to 2–3 tablespoons additional warm water or simple syrup a tablespoon at a time until you reach the desired consistency. Chill the syrup base in the refrigerator for at least 15 minutes if not using immediately.
To Serve
Fill 4 serving glasses with about 3/4 cup crushed or shaved ice each (roughly 3 cups total used across servings).
Divide the chilled jallab syrup evenly among the 4 glasses (about 1/4 cup or 4 tablespoons per glass). Pour it over the ice so it cascades and colors the ice evenly. Stir gently if needed.
Scatter toasted pine nuts (about 1/2 tablespoon per glass), raisins (about 1/2 tablespoon per glass, optional), and a pinch of chopped pistachios on top as garnish. Add a mint leaf or two to each glass if desired.
Serve immediately with a spoon or straw so diners can scoop the nuts and raisins. Leftover syrup keeps covered in the refrigerator for up to 7 days; stir before using.
