Method
Chamomile Tea
Cover and steep
Cover and let steep for 5 to 7 minutes for a mild to medium strength; steep up to 10 minutes if you prefer stronger flavor.
Mint Tea
Rinse leaves
Rinse 10 fresh mint leaves under cool running water to remove any dirt.
Bruise leaves
Lightly bruise the leaves with your fingers or the back of a spoon to release essential oils.
Boil water and steep
Bring 8 oz (about 240 ml) of water to a boil. Place the bruised leaves in a cup or teapot and pour the hot water over them. Cover and steep for 5 to 10 minutes depending on desired strength.
Ginger Tea
Prepare ginger
Peel and thinly slice about 1 tablespoon fresh ginger (about a 1-inch piece). Thinner slices release more flavor quickly.
Simmer
Bring 8 oz (about 240 ml) of water to a boil. Add the sliced ginger, reduce heat to a simmer, and simmer gently for 10 to 15 minutes for a pronounced, warming flavor. Simmer 5 to 7 minutes for a milder taste.
Strain and season
Strain the ginger slices and pour the tea into a cup. Stir in 1 tsp honey and 1 tsp lemon juice if desired. Adjust sweetener and lemon to taste and serve warm.
