Chill and grind
Place the chicken thighs and breasts in the freezer for 20–30 minutes until slightly firm but not frozen solid. Chill the bowl and blade of your food processor or meat grinder if possible. Cut the chicken into 1-inch pieces. Working in batches, pulse the chicken through a coarse plate (or use the food processor to pulse to a coarse mince), then through a fine plate once for a smooth sausage texture. Keep the ground meat cold.
Prepare aromatics
Finely grate the onion, then press or squeeze it in a towel to remove excess liquid. Mince the garlic. Measure and combine the salt, white pepper, ground coriander, cumin, paprika, chili flakes, nutmeg, and sugar in a small bowl; set aside.
Make Sausage Mixture
In a large mixing bowl or in the chilled bowl of a stand mixer fitted with a paddle attachment, place the ground chicken. Add the dry spice mix and the grated onion, minced garlic, olive oil and half the ice water. Mix briefly to incorporate — about 30–45 seconds by hand or 1 minute on low in a mixer. The mixture should be tacky but not soupy.
Add the remaining ice water in a slow steady stream while mixing to help the proteins bind and create a cohesive texture. Mix for another 1–2 minutes until the batter is sticky and emulsified. Do not overheat the meat; keep it cold between steps.
Taste-test for seasoning: remove about 1 tablespoon of the mixture, form into a small patty and pan-fry until cooked through (about 2–3 minutes per side). Cool slightly and taste; adjust salt or spices in the main batch as needed.
Stuffing & Forming
Prepare casings: if using natural casings, run water through them to remove salt and open them. Rinse well and soak in warm water for 30 minutes to make them pliable. Slide the casing onto the sausage stuffer tube, leaving a few inches overhanging the end and tie a knot at the far end.
Fill a sausage stuffer with the sausage mixture, keeping the meat cold. With the stuffer at low speed, feed the mixture into the casing, supporting the filled casing as it comes off the tube. Aim for sausages about 4–5 inches long; squeeze out air pockets by pricking lightly with a sanitized needle as needed. Twist links at regular intervals, alternating direction for each link.
If you don't have casings, form patties: portion the mixture into 8–10 even portions (about 90–110 g each) and shape into sausages or patties. Refrigerate formed sausages for at least 30 minutes to firm up before cooking or freezing.
Cook & Finish
Poach (preferred to set shape): Place the linked sausages in a large pot and add enough water to just cover them. Slowly bring to a gentle simmer over medium-low heat; do not boil. Simmer for 12–15 minutes until the internal temperature reaches 74°C (165°F). Remove and let rest 5 minutes.
Alternatively, grill the sausages over medium heat for 6–10 minutes, turning occasionally, until internal temperature reaches 74°C (165°F) and a nice char forms.
Storage
Refrigerate cooked sausages in an airtight container for up to 4 days. Freeze uncooked formed sausages (well-wrapped) for up to 3 months. Thaw overnight in refrigerator before cooking.
