Method
Whole Chicken Option (roast)
Prepare and season
Preheat oven to 425°F (220°C). Pat the whole chicken dry with paper towels. Rub olive oil all over the skin. Mix kosher salt, black pepper, and minced garlic and rub evenly over and under the skin where possible. Place halved lemon, rosemary sprigs, and quartered onion into the cavity.
Roast
Tie the legs together with kitchen twine and tuck wing tips under. Place chicken breast-side up on a rack in a roasting pan. Roast for 15 minutes at 425°F (220°C) then reduce heat to 375°F (190°C) and continue roasting until internal temperature at the thickest part of the thigh reaches 165°F (74°C), about 45–60 more minutes depending on size (total ~60–80 minutes). Baste once or twice with pan juices.
Bone-in Pieces (grill or oven)
Marinate
In a bowl combine yogurt, lemon juice, garlic paste, ground cumin, smoked paprika, olive oil, salt, and pepper. Add bone-in pieces and coat thoroughly. Cover and marinate in refrigerator for at least 1 hour or up to 8 hours (overnight for best flavor).
Cook (oven)
Preheat oven to 425°F (220°C). Arrange marinated pieces on a baking sheet lined with foil or a roasting pan. Roast for 25–35 minutes, turning once, until golden and internal temperature is 165°F (74°C). Broil 1–2 minutes at the end for extra browning if desired.
Finish and serve
Rest pieces 5 minutes. Serve with chopped herbs and lemon wedges.
Boneless Thighs (pan-sear / braise)
Season and sear
Pat boneless thighs dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering. Add thighs in a single layer, skin-side (if skin-on) or presentation-side down, and sear 4–5 minutes until deeply browned. Flip and sear the other side 3–4 minutes.
Aromatics and braise
Reduce heat to medium. Push thighs to one side, add butter and sliced shallot to the pan and cook 1–2 minutes until softened. Add minced garlic and cook 30 seconds. Pour chicken stock and scrape any browned bits from the bottom. Spoon stock over thighs and simmer uncovered for 6–8 minutes until thighs are cooked through (internal temp 165°F / 74°C) and sauce reduced slightly.
Finish
Stir in lemon zest and chopped parsley, taste and adjust seasoning. Remove from heat and let rest 3 minutes before serving spooning pan sauce over thighs.
Breast Cuts (quick-cook)
Prepare breasts
If breasts are thick, butterfly or pound to even thickness ~1/2–3/4 inch. Pat dry. Mix salt, pepper, smoked paprika, and garlic powder and rub evenly over both sides.
Pan-sear
Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook undisturbed 4–6 minutes until a golden crust forms. Flip, add butter, and cook 3–5 minutes more, spooning melted butter over breasts, until internal temp reads 165°F (74°C).
