Beef Patties
Form patties
Divide the 1 lb halal ground beef into two equal portions (about 8 oz / 225 g each). Gently form each portion into a patty about 4-4.5 inches (10-11 cm) across and roughly 3/4 inch (2 cm) thick. Do not overwork the meat—handle it just enough to hold together. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.
Season both sides of each formed patty with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. If using, brush or sprinkle 1/2 tsp Worcestershire sauce evenly over each patty for extra savory flavor.
Cook patties
Heat a cast-iron skillet or griddle over medium-high heat until very hot (about 3-4 minutes). Add 1 tablespoon vegetable oil and spread to coat the surface. Place patties on the hot surface, leaving space between them. Cook without moving for 3-4 minutes until a brown crust forms. Flip and cook the second side for 3 minutes for medium doneness (adjust 2-3 additional minutes for more well done). In the last 30-45 seconds of cooking, place 2 slices of cheddar on each patty, cover the pan with a lid or an upside-down pan to melt the cheese quickly and evenly.
Cheese & Melt
If you prefer a more pronounced cheese melt, add a splash (about 1 tbs) of water to the hot pan and immediately cover for 10-15 seconds before removing patties to create steam and finish melting.
Buns & Build
Toast buns
Split the 2 burger buns and spread about 1/2 tablespoon softened butter on each cut side. Place buns buttered-side down in the same skillet over medium heat and toast 1-2 minutes until golden and crisp. Watch carefully to avoid burning.
On the bottom bun spread 1 tablespoon mayonnaise, then place a lettuce leaf, followed by the cheeseburger patty. Top the patty with 1 tablespoon ketchup and 1/2 tablespoon mustard (adjust to taste). Add tomato slice(s), red onion rings (if using), and pickle slices. Spread remaining mayonnaise or a little extra ketchup on the top bun if desired, then place top bun to complete the burger.
Toppings
Assemble toppings just before serving to keep lettuce crisp and bun from becoming soggy. If using pickled jalapeños, add them on top of the cheese or under the top bun for an extra kick.
Season tomato slices lightly with a pinch of salt and pepper if desired.

Estimated internal temperature for medium is 160°F (71°C) for ground beef if you prefer to check with a meat thermometer. Adjust cooking time to reach your desired doneness while respecting food-safety guidance.
