Meat & Marinade

Prepare meat

Trim excess fat from the lamb and goat, then cut into 1–1.5 inch cubes if not already cut. Pat dry with paper towels.

Make marinade

In a large bowl combine yogurt, minced garlic, grated ginger, lemon juice, olive oil, ground cumin, ground coriander, smoked paprika, cinnamon, ground black pepper and kosher salt. Whisk until smooth.

Marinate

Add lamb and goat cubes to the marinade and toss until well coated. Cover and refrigerate for at least 4 hours, preferably overnight (8–12 hours) to tenderize and develop flavor.

Prepare vegetables

While the meat marinates (or 30 minutes before cooking), slice the yellow onion and quarter the red onion into wedges. Core and cut bell peppers into 1-inch pieces. Rinse cherry tomatoes and set everything aside.

Sear aromatics

About 20 minutes before finishing marinade, heat 1 tablespoon olive oil in a heavy-bottomed Dutch oven or large skillet over medium-high heat. Add the sliced yellow onion and cook, stirring occasionally, until soft and beginning to caramelize, about 6–8 minutes. Transfer onions to a bowl and set aside.

Brown the meat

Increase heat to high and add remaining 1 tablespoon olive oil to the pot. Working in batches to avoid overcrowding, add marinated meat pieces in a single layer and sear until well browned on all sides, about 3–4 minutes per side. Remove browned pieces to a plate as you go.

Deglaze

When all meat is browned and removed, lower heat to medium and pour in the white wine (or 60 ml stock). Scrape up browned bits from the bottom of the pot with a wooden spoon — these add rich flavor.

Build sauce

Stir in tomato paste and cook for 1 minute to remove raw taste. Return all browned meat and reserved onions to the pot. Add remaining stock (about 440 ml if wine used) so the liquid comes halfway up the meat; add honey or date syrup and bring to a gentle simmer.

Simmer gently

Cover the pot partially (lid slightly ajar) and simmer on low heat for 1 to 1¼ hours, stirring every 15 minutes, until both lamb and goat are tender and sauce has reduced and thickened. If stew gets too dry, add additional hot stock, 60–120 ml at a time.

Add vegetables

About 15 minutes before the end of cooking, stir in bell peppers, red onion wedges and cherry tomatoes. Continue to simmer uncovered so vegetables soften but retain some texture.

Finish & Serve

Check seasoning and finish

Taste the sauce and adjust salt and pepper as needed. Stir in chopped cilantro and parsley. If you like, sprinkle ground sumac over the stew for a lemony tang and scatter toasted pine nuts on top for crunch.

Rest and serve

Let the stew rest off heat for 5–10 minutes. Serve hot with lemon wedges alongside: rice, flatbread, couscous or roasted vegetables. Spoon sauce generously over servings.
