Prepare cucumbers
Wash cucumbers. Trim the ends. If using English cucumbers, slice into 1/8- to 1/4-inch rounds; if using larger cucumbers, halve lengthwise and thinly slice. Place sliced cucumbers in a large bowl.
Slice onion and tomatoes
Trim and halve the red onion; thinly slice into half-moons and add to the cucumbers. If using cherry tomatoes, halve them and add to the bowl.
Dressing
In a small bowl or jar, combine the olive oil, lemon juice, white wine vinegar, minced garlic, honey (or sugar), remaining 1/2 teaspoon salt, black pepper, and red pepper flakes (if using). Whisk vigorously or shake the jar until the dressing emulsifies and the honey dissolves.
Let sit for 5–15 minutes at room temperature to allow flavors to meld. For best chill, refrigerate for 15–30 minutes before serving. Toss again briefly before plating.
