Prepare the Steaks
Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.
Season the Steaks
Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.
Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it shimmers.
Sear the Steaks
Add the filet mignon to the hot skillet. Sear for about 4-5 minutes on one side without moving them, until a golden-brown crust forms. Flip and cook for an additional 4-5 minutes for medium-rare.
Make the Garlic Butter
In the last minute of cooking, add the unsalted butter and crushed garlic cloves to the skillet. Baste the steaks with the melted garlic butter.
Rest the Steaks
Remove the steaks from the skillet and let them rest for 5 minutes. This allows the juices to redistribute.
Garnish and Serve
Garnish with chopped fresh parsley and serve with the garlic butter drizzled on top.
