Make the Crepe Batter

In a mixing bowl, whisk together the flour, milk, eggs, salt, and pepper until smooth. Let the batter rest for 15 minutes.

Cook the Crepes

Heat a non-stick skillet over medium heat and melt a little butter. Pour about 1/4 cup of the crepe batter into the skillet, swirling to cover the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with remaining batter.

Prepare the Filling

In a bowl, combine the shredded pork with barbecue sauce. Stir to coat the pork evenly.

Assemble the Crepes

Place a crepe on a plate, add a portion of the pulled pork mixture, and sprinkle with mixed cheese. Fold the crepe over the filling and repeat with remaining crepes.

Serve

Serve the pulled pork crepes warm, drizzled with additional barbecue sauce if desired.
