Smoked Beef Brisket

Method

Smoked Beef Brisket

Prep

Trim brisket to about 1/4 inch fat cap if needed. Pat dry with paper towels and rub all over with olive oil to help season adhere.

Season

Combine kosher salt, coarse black pepper, garlic powder and onion powder. Evenly coat the entire brisket with the rub, pressing lightly to adhere. Let rest uncovered in refrigerator for at least 2 hours or up to overnight.

Smoke

Set smoker to 225°F (107°C). Add soaked apple wood chips to the smoke box or on coals. Place brisket fat-side up on the smoker rack. Smoke until internal temperature reaches 165°F (about 5–7 hours depending on size). Maintain consistent temperature and replenish wood as needed.

Wrap and Finish

When brisket hits 165°F and has a nice bark, wrap tightly in butcher paper or foil and return to the smoker. Continue smoking until internal temperature reaches 203°F (approx. additional 3–5 hours).

Rest and Slice

Remove brisket from smoker and let rest, wrapped, for 45–60 minutes. Unwrap and slice against the grain into 1/4–1/2 inch slices. Serve with classic beef sauce on the side.

Spicy Pulled Pork

Make rub & prep pork

Mix brown sugar, smoked paprika, ground cumin, chili powder, kosher salt and black pepper. Trim excess large exterior fat, leaving a thin layer. Rub the spice mix all over the pork shoulder, pressing to adhere.

Bind & Smoke

Combine yellow mustard and 1 cup apple cider vinegar; brush a light coat over the rubbed pork to help bind the spices. Preheat smoker to 250°F (121°C) and add soaked hickory chips. Place pork shoulder on the smoker fat-side up.

Smoke to Pulled

Smoke until the internal temperature reaches 195–205°F (about 8–10 hours depending on weight). Every 2–3 hours spritz with a mix of 1/2 cup apple cider vinegar and 1/2 cup water to keep surface moist and add tang.

Rest & Shred

When the pork reaches target temperature and probe-tender, remove and let rest for 30–45 minutes wrapped in foil. Using two forks or meat claws, shred the pork, discarding excess fat. Stir in 1 cup of sweet-spicy pork finishing sauce to taste, or serve sauce on the side.

Smoked Chicken Thighs (Honey-Chipotle)

Marinate

Whisk honey, minced chipotle, soy sauce, minced garlic, kosher salt and black pepper. Toss chicken thighs in the mixture and refrigerate for at least 1 hour or up to 4 hours, turning occasionally so the glaze coats evenly.

Smoke

Preheat smoker to 275°F (135°C) and add soaked pecan or mesquite chips. Arrange thighs skin-side up on the grate leaving space between pieces. Smoke until internal temperature reaches 175–180°F and skin is nicely colored (about 1–1.5 hours).

Glaze & Finish

During the final 10 minutes, brush additional honey over thighs for a glossy finish. Remove from smoker and let rest 5–10 minutes. Serve hot with lemon wedges and chopped parsley.

Smoked Cornbread

Prepare batter

Preheat smoker or oven to 375°F (190°C). In a bowl whisk together cornmeal, flour, sugar, baking powder and salt. In a separate bowl whisk milk, eggs and melted butter. Combine wet into dry until just combined; do not overmix.

Smoke/bake

Pour batter into a greased cast-iron skillet or 9-inch pan. Place in smoker (or oven) at 375°F. If using smoker, use a small amount of mild wood smoke (apple or pecan). Bake 20–25 minutes until golden and a toothpick comes out clean.

Serve

Let cornbread cool 10 minutes, slice and serve warm with chipotle honey butter if desired.

Sauce warming & plating

Warm sauces gently on the stove or in a small slow cooker. Arrange brisket slices, pulled pork and chicken thighs on serving platters. Garnish with chopped parsley and lemon wedges. Offer sauces on the side: classic beef sauce for brisket, sweet-spicy for pulled pork, and extra honey for chicken.

Timing & service

Keep smoked proteins loosely covered to retain moisture and reheat gently if needed (steam over low heat or short time in 250°F oven). For a buffet, slice brisket just before service and keep pulled pork warm in a covered pan with a little sauce to prevent drying.
