    Inspect and rinse peanuts

    Sort through the raw green peanuts and remove any shriveled, damaged or shell fragments. Rinse the peanuts thoroughly under cold running water to remove dirt. Drain.

    Optional short soak (reduces cook time)

    If you have 1–2 hours to spare, place the rinsed peanuts in a large bowl, cover with water and let them sit 1–2 hours to start softening (optional). Drain again before cooking.

    Make the seasoned brine

    In a large heavy-bottomed stockpot (big enough to allow peanuts to be covered by at least 2 inches of liquid), combine 20 cups water, 1/2 cup kosher salt, 3 tbs Cajun seasoning, 1 tbs smoked paprika, 1 tbs garlic powder, 1 tbs onion powder, 1 tsp cayenne pepper, 3 bay leaves, 2 tbs Worcestershire sauce and 1 tsp freshly ground black pepper. If using beer, add 1 cup now. Stir to dissolve salt and distribute spices.

    Bring brine to a vigorous boil

    Place the pot over high heat and bring the seasoned water to a full rolling boil so flavors bloom and the salt dissolves thoroughly (about 8–12 minutes).

    Add peanuts and return to boil

    Carefully add the drained peanuts to the boiling brine. Stir once to submerge. Bring back to a rapid boil, uncovered, for 10–15 minutes to jump-start penetration of flavors.

    Simmer until tender

    Reduce heat to maintain a gentle but steady simmer. Cook uncovered, stirring and skimming any foam occasionally, until peanuts reach desired softness when shells are opened — typically 2 to 3 hours for green peanuts (check after 90 minutes, then every 30 minutes). If the liquid level drops below peanuts, add hot water to keep them submerged. For firmer 'bite' stop earlier; for very soft peanuts cook longer. Taste one peanut every 20–30 minutes to judge doneness.

    Adjust seasoning

    When peanuts are just tender, taste one. If needed, add extra salt, a pinch more cayenne, or a splash of hot sauce to increase heat. Stir and simmer 5–10 minutes to meld any added seasonings.

    Optional butter finish and rest

    For a richer finish, stir in 2 tbs unsalted butter off the heat until melted. Turn off the heat and let the peanuts rest in the hot cooking liquid for at least 30 minutes — they will continue to absorb flavor as they cool.

    Serve

    Drain slightly (many prefer to serve with some cooking liquid on the side) and transfer peanuts to a serving bowl. Garnish with 1/2 cup chopped green onions and offer extra hot sauce at the table. Serve warm or at room temperature.

    Storage

    Cool peanuts completely in the cooking liquid, then store in an airtight container with some brine in the refrigerator for up to 5 days. Reheat gently in simmering brine or microwave, adding a splash of water if needed.

    Pressure-cooker / Instant Pot alternative

    If using a pressure cooker or Instant Pot: use the same ratios in the pot, seal and cook on high pressure for 30–60 minutes depending on peanut freshness and desired softness (fresh green peanuts ~30–40 minutes; older peanuts toward 60). Natural release 10–15 minutes, then test and simmer uncovered with additional seasoning if needed.
