An authentic African soups. Served with red snapper. All served.
Gather all ingredients and chop the vegetables as indicated.
In a large pot, heat the palm oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent.
Pour in the vegetable broth or water and bring to a boil. Add the chopped spinach or kale, scotch bonnet pepper, salt, and black pepper. Simmer for about 10 minutes.
Gently place the red snapper fillets into the pot and cover. Let it cook for an additional 10-15 minutes, or until the fish is cooked through and flakes easily.
Taste and adjust seasoning if necessary. Serve hot, garnished with additional chopped greens if desired.
