In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and slightly thick. Let it rest for about 15 minutes.

Prepare the Batter

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, the oil is ready.

Heat the Oil

Dredge each cod fillet in a little flour to coat lightly, then dip it into the beer batter, ensuring it is fully covered.

Batter the Cod

Carefully place the battered cod fillets into the hot oil. Fry in batches for about 4-5 minutes per side, or until golden brown and cooked through. Remove the cod and place it on a plate lined with paper towels to drain excess oil.

Fry the Cod

In a small bowl, combine the mayonnaise, dill pickle relish, lemon juice, minced capers, and chopped dill. Mix well until fully combined.

Add salt and black pepper to taste, mixing thoroughly. Adjust seasoning as desired.

Season
