Prepare the Mignonette

In a bowl, combine finely chopped shallots, red wine vinegar, black pepper, cucumber, carrot, and celery. Mix well and let it sit for at least 30 minutes to allow the flavors to meld.

Grill the Lemon

Preheat your grill to medium-high heat. Cut the lemon in half and place it cut-side down on the grill. Grill for about 3-5 minutes until you see grill marks and the lemon softens. Remove from the grill.

Shuck the Oysters

Carefully shuck the oysters, discarding the top shell. Place the oysters on a serving platter with the deeper shell side down to retain the juices.

Serve

Spoon a small amount of the jardiniere mignonette over each oyster. Serve with the grilled lemon halves on the side for squeezing over the oysters.
