Make the Panisse

In a saucepan, combine the water and salt and bring to a boil. Gradually whisk in the chickpea flour, stirring constantly to avoid lumps. Cook for about 5 minutes until the mixture thickens and starts to pull away from the sides of the pan. Remove from heat and pour the mixture into a greased baking dish. Allow to cool and set for at least 1 hour.

Cut and Fry the Panisse

Once set, remove the chickpea mixture from the baking dish and cut it into desired shapes (squares or triangles). Heat olive oil in a skillet over medium heat and fry the panisse pieces until golden brown and crispy on all sides, about 3-4 minutes per side.
