Prepare the Gelatin
In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water and let it bloom for about 5 minutes.
Heat the Cream and Sugar
In a saucepan, combine the heavy cream, sugar, and a pinch of salt. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.
Combine Gelatin
Once the cream mixture is hot, remove it from the heat. Add the bloomed gelatin and stir until completely dissolved.
Add Buttermilk and Vanilla
Stir in the buttermilk and vanilla extract until well combined.
Pour and Chill
Pour the mixture into individual serving cups or molds. Refrigerate for at least 4 hours, or until set.
Serve
Once set, gently run a knife around the edges of the panna cotta if using molds, and invert onto plates. Serve chilled.
