Prepare shrimp
If shrimp are frozen, thaw completely and pat dry with paper towels. Peel and devein if not already done; leave tails on for presentation if desired. Lightly score the underside of the shrimp (a shallow slice along the belly) to keep them straight when frying. Season the shrimp with 1 tsp kosher salt and 1 tsp freshly ground black pepper; set aside while you make the marinade (about 5 minutes).

In a bowl combine 2 tbs light soy sauce, 1 tbs mirin, 1 tbs sake, 1 tbs grated fresh ginger, 1 tsp grated garlic, 1 tsp sesame oil, and 1 tbs cornstarch. Whisk until the cornstarch is dissolved and the mixture is homogenous.
Marinate shrimp
Place the seasoned shrimp in the marinade, toss gently to coat each piece. Cover and refrigerate for 15–25 minutes. Do not marinate longer than 30 minutes or the texture can become mushy from the acid and enzymes in the marinade.

While the shrimp marinates, combine 3 tbs potato starch, 1 tbs all-purpose flour, 1 tbs dry cornstarch, 1/2 tsp black pepper and 1/2 tsp kosher salt in a wide shallow bowl or plate. Mix well so there are no lumps.
Coat shrimp
Remove shrimp from the marinade in small batches, letting excess marinade drip back into the bowl. Dredge each shrimp thoroughly in the starch/flour mixture, pressing lightly so the coating adheres evenly. Shake off any excess coating. Place coated shrimp on a wire rack or tray; allow to sit for 5 minutes to let the coating set (this helps form a crisper crust).
Frying / Serving

Pour about 1 cup neutral oil into a deep skillet or small pot to a depth of about 1 to 1 1/2 inches (enough for shallow-frying). Heat over medium-high until the oil reaches 340–350°F (170–175°C). If you don't have a thermometer, test by dropping a small pinch of coating into the oil — it should sizzle and slowly rise without browning immediately.
Fry shrimp (first fry)
Working in batches to avoid crowding (2–4 shrimp per batch depending on pan size), gently lower coated shrimp into the oil. Fry the first time for 45–60 seconds until the coating sets but shrimp is not fully browned. Remove with a slotted spoon and drain on a wire rack or paper towel-lined tray.
Rest between fries
Let the initially fried shrimp rest for 1–2 minutes. This two-stage frying (first fry to cook shrimp through, second to crisp) gives the best texture.
Fry shrimp (second fry)
Return oil to 360–375°F (182–190°C). Fry the shrimp again in batches for 30–45 seconds, or until the coating is golden and crisp. Watch carefully — shrimp cook quickly and will be done when the exterior turns a light golden brown.
Drain and season
Remove shrimp and transfer to a wire rack or paper towel. Immediately sprinkle a small pinch of kosher salt over the hot shrimp to taste.
Prepare dipping sauce (optional)
For a simple sauce, combine 1/4 cup Japanese mayonnaise with a squeeze of lemon (about 1 tsp) or 1 tsp soy sauce and stir. Adjust to taste. Alternatively serve with lemon wedges and extra mayo on the side.
Serve
Arrange shrimp on a platter over shredded cabbage or microgreens if using. Serve hot with lemon wedges and the mayonnaise or dipping sauce. Garnish with a final light sprinkle of freshly ground pepper if desired.
