Fit Turkey Wrap

Begin by harvesting ripe Chenin Blanc grapes from the vineyard. Aim to collect around 100 kg of grapes, ensuring they are free from rot or disease.

Harvesting Grapes

Once harvested, crush the grapes using a wine press to extract the juice. Make sure to separate the skins and seeds from the juice to prevent bitterness.

Transfer the grape juice into a fermentation vessel. Add 10g of yeast to the juice to initiate fermentation. Allow the mixture to ferment at a controlled temperature of around 18-22°C for about 2-3 weeks.

After fermentation, add 50 mg/L of sulfur dioxide to the wine to protect it from oxidation and spoilage.

Add 5g of fining agents (such as bentonite) to the wine to clarify it. Stir gently and allow it to settle for a week.

Fining the Wine

Once clarified, filter the wine to remove any remaining solids. Transfer the wine into bottles, ensuring to leave some space at the top. Seal the bottles with corks.

Filtering and Bottling

Allow the bottled wine to age for at least 6 months before consumption. Store in a cool, dark place to enhance the flavors.
