Crispy Salmon Skin
Prepare skin
Pat the salmon skin pieces very dry with paper towels. If any pieces still have flesh attached, trim it off as much as possible to prevent chewy bits. Lightly score the skin side with a sharp knife in a crosshatch pattern, being careful not to cut through.
Season both sides of the skin with kosher salt and freshly ground black pepper.
Heat a large nonstick or stainless steel skillet over medium-high heat until hot (about 2–3 minutes). Add 2 tablespoons neutral oil and swirl to coat.
Flip carefully and cook the flesh side for 30–60 seconds only to finish (this step is brief because you want fully crisped skin; avoid overcooking). Remove to a paper-towel-lined plate to drain and crisp further. If making in batches, keep finished pieces on a cooling rack in a single layer so they stay crisp.
Once cooled slightly, use kitchen shears or a knife to cut the crispy skin into bite-size strips (about 1/2–1 inch wide).

Place mixed salad greens in a large bowl. Add the thinly sliced cucumber, radishes, sliced scallions, and cilantro (if using). Toss gently to combine and aerate the greens so dressing will coat evenly.
If you prefer the salad slightly chilled, refrigerate the mixed greens and sliced vegetables for 10 minutes before dressing.
Dressing
In a small bowl or jar, combine 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 tablespoon lime juice, 1 teaspoon toasted sesame oil, 1 teaspoon honey (or agave), 1 teaspoon grated fresh ginger, 1/2 teaspoon minced garlic, 1/4 teaspoon red pepper flakes, and 1 teaspoon neutral oil (optional).
Assembly & Garnish
Right before serving, pour the dressing over the salad bowl (start with about 2 tablespoons and toss; reserve extra to add at the table). Toss gently but thoroughly so the dressing coats the greens and vegetables.
Arrange the salad on individual plates or a serving platter. Scatter the crispy salmon skin strips over the top so they remain as crisp as possible (if tossed too early they will soften).
Sprinkle toasted sesame seeds and microgreens or extra herbs over the salad. Serve with lime wedges alongside for guests to squeeze as desired.
If you need to hold the salad for more than 10–15 minutes, keep the salmon skin separate and add just before serving to preserve crispness.
