Jarritos (Mexican-style Fruit Soda) - Makes ~6 servings

Preparation and assembly
Prepare juice or puree (if using whole fruit)
If using whole fruit (pineapple, mandarin/orange), peel and core as needed. Roughly chop and place 2 cups of fruit in a blender. Blend on high until smooth, 30–60 seconds. If you prefer a smoother soda, strain the puree through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Measure 2 cups of strained juice/puree for the recipe.
Prepare tamarind (if using tamarind concentrate)
If using tamarind pods or paste, dissolve ~1/2 cup tamarind paste in 1/2 cup hot water, mash and strain to yield 1 cup of concentrate. Adjust sweetness later. Reserve any solids in the strainer.
Sweeten the fruit base
Combine the 2 cups of chosen juice/puree with 3 tablespoons granulated sugar, 2 tablespoons fresh lime juice and a pinch of sea salt in a pitcher. Stir vigorously until the sugar begins to dissolve. If the sugar does not dissolve easily (thicker purees or cold juices), briefly whisk in 1–2 tablespoons of simple syrup until fully incorporated. Taste and adjust sweetness: Jarritos are moderately sweet, so add up to 1 additional tablespoon sugar or syrup if needed.
Chill and carbonate
Ensure the sparkling water is well chilled (colder water holds carbonation better). For each serving, use a roughly 1 part juice base to 3 parts sparkling water ratio. In a large pitcher, pour the 2 cups flavored base, then slowly add 6 cups chilled sparkling water while gently stirring once or twice to combine without losing too much carbonation.
Assemble glasses
Fill six tall glasses with ice cubes as desired. Pour the Jarritos mixture over the ice, dividing evenly. Garnish each glass with a slice of lime or an appropriate fruit slice (pineapple wedge, orange wheel, tamarind pod, or grapes on a pick). Serve immediately to preserve fizz.
Optional: Bottle and store
To bottle, use clean, airtight bottles. Fill bottles leaving ~1 inch headspace and refrigerate. Consume within 24–48 hours for best carbonation and flavor. If storing, add sparkling water just before serving to refresh fizz.
