Method

Prepare the Dough

1

Mix Ingredients

In a large bowl, combine the all-purpose flour and salt. In a separate bowl, mix the sourdough starter with warm water until well combined. Gradually add the wet mixture to the dry ingredients, mixing until a shaggy dough forms.

2

Knead the Dough

Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 4-6 hours or until doubled in size.

Bake the Sourdough

3

Shape the Dough

Once the dough has risen, gently deflate it and turn it out onto a lightly floured surface. Shape the dough into a round loaf.

4

Second Rise

Place the shaped loaf onto a baking sheet lined with parchment paper. Cover with a cloth and let it rise for another 1-2 hours.

5

Preheat the Oven

Preheat your oven to 450°F (232°C) while the dough is rising.

6

Bake the Bread

Once the dough has risen, make a few slashes on the top with a sharp knife. Bake in the preheated oven for about 30-35 minutes or until the crust is golden brown and the bread sounds hollow when tapped.

Serve

7

Add Toppings

Allow the bread to cool slightly before slicing. Serve with a generous spread of crema di lardo, topped with fire roasted peppers, and drizzled with saba.
