Prepare the Chicken

In a bowl, mix olive oil, lemon juice, minced garlic, salt, black pepper, and chopped fresh herbs. Rub this mixture all over the chicken halves, ensuring even coverage. Let marinate for at least 30 minutes.

Prepare the Potatoes

Wash and cut the tri-color potatoes into halves or quarters. Boil in salted water for about 10-15 minutes until just tender, then drain and set aside.

Grill the Chicken

Preheat the grill to medium-high heat. Place the marinated chicken halves skin-side down on the grill. Cook for about 15-20 minutes, then flip and cook for another 15-20 minutes or until the internal temperature reaches 165°F (75°C).

Sauté the Chanterelle Mushrooms

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chanterelle mushrooms and sauté for about 5-7 minutes until golden and tender. Season with a pinch of salt and set aside.

Char the Scallions

Place the scallions on the grill for 2-3 minutes until charred, turning occasionally. Remove and chop into smaller pieces.

On a plate, arrange the grilled chicken halves, boiled tri-color potatoes, sautéed chanterelle mushrooms, and charred scallions. Drizzle with additional lemon and herb vinaigrette if desired.
