Prepare the Mushrooms

Clean the wild mushrooms with a damp cloth to remove any dirt. Trim the stems if necessary and cut larger mushrooms into bite-sized pieces.

Preheat the Oven

Preheat your oven to 200°C (392°F).

Roast the Mushrooms

In a large bowl, toss the mushrooms with olive oil, salt, black pepper, and fresh thyme. Spread them out on a baking sheet in a single layer. Roast in the oven for about 20 minutes, or until the mushrooms are golden and tender.

Prepare the Garlic Confit

While the mushrooms are roasting, gently heat the garlic confit in a small saucepan until warmed through. Set aside.

Serve the Dish

Once the mushrooms are roasted, plate them on a serving dish. Drizzle with black garlic molasses and top with warmed garlic confit. Serve alongside rice crackers.
