Prepare the Potatoes

In a large pot, boil the diced potatoes in salted water until tender, about 10 minutes. Drain and set aside.

Crisp the Potatoes

In a large skillet over medium heat, add a little oil and the boiled potatoes. Cook, turning occasionally, until crispy and golden brown, about 10-15 minutes.

Add Confit Duck

Shred the confit duck leg and add it to the skillet with the crispy potatoes. Stir in the Calabrian chili paste and cook for another 5 minutes to heat through.

Fry the Duck Eggs

In a separate pan, fry the duck eggs sunny-side up until the whites are set and the yolks are still runny.

Assemble the Dish

On a serving plate, place a generous portion of the duck and potato mixture. Top with fresh arugula and a fried duck egg. Drizzle with chimichurri before serving.
