Prepare the Ribeye

Season the dry-aged ribeye steak with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

Marinate

In a bowl, mix together bourbon and maple syrup. Place the ribeye in a zip-top bag and pour the marinade over the steak. Seal the bag and marinate in the refrigerator for at least 2 hours, preferably overnight.

Preheat Grill

If using a charcoal grill, preheat it and add oak chips to the coals for smoking. If using a gas grill, place the oak chips in a smoker box or wrap them in aluminum foil with holes poked in it.

Grill the Steak

Remove the steak from the marinade and let any excess liquid drip off. Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until the desired doneness is achieved. During the last minute, sprinkle chopped black walnuts on top of the steak.

Rest and Serve

Remove the steak from the grill and let it rest for 5-10 minutes before slicing. Serve with additional maple syrup or bourbon sauce, if desired.
