Preparation
Fry the Potatoes
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cubed potatoes and cook until golden brown and tender, about 10-12 minutes. Stir occasionally.
Cooking
Prepare the Egg Mixture
In a large bowl, crack the eggs and whisk until combined. Add the cooked vegetable mixture to the eggs and stir to combine.
Finish Cooking
Once the bottom is set, carefully flip the tarta using a large plate or lid. Cook for an additional 5-7 minutes until the second side is golden brown and the eggs are fully cooked.
Serve
Slide the tarta onto a serving plate. Slice into wedges and serve warm with aioli on the side.
