In a large mixing bowl, combine the corn flour, salt, and water. Mix well until the dough is smooth and not sticky. If needed, adjust with a little more flour or water to achieve the right consistency.

Shape the Collantes

Divide the dough into small balls, approximately the size of a golf ball. Flatten each ball into a disc about 1/4 inch thick. Make sure the edges are not too thin to avoid breaking.

Place a spoonful of cheese and a sprinkle of chopped green onions in the center of each disc. Fold the dough over to create a half-moon shape and press the edges firmly to seal.
