Tater Tots
Preheat
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly oil it.
Spread the frozen tater tots in a single layer on the prepared baking sheet. Drizzle 1 tablespoon neutral oil over them and toss gently so they are evenly coated.
Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Roast in the preheated oven for 20–25 minutes, turning once halfway through, until golden brown and crispy. Remove from oven and keep warm.
Sauces
Make regular mayo (if preferred to thin) — otherwise use straight: In a small bowl combine 1/2 cup mayonnaise and 1 teaspoon fresh lime juice, whisk until smooth. Taste and adjust with a pinch of salt if desired. Set aside.
Make sriracha mayo: In a separate small bowl combine 1/2 cup mayonnaise (use 1/2 of the mayo measured above) with 2 teaspoons sriracha, 1/2 teaspoon lime juice and 1/2 teaspoon honey (optional). Whisk until homogeneous and smooth. Adjust heat by adding more sriracha if desired. Transfer both sauces to squeeze bottles or small bowls for plating.

Choose style
Decide whether to prepare the eggs scrambled or over-easy. The following instructions provide both methods.
Scrambled eggs
In a medium bowl, crack 4 large eggs and add 2 tablespoons milk, 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper. Whisk until frothy and uniform. Heat a nonstick skillet over medium-low heat and add 1 tablespoon butter. Once melted and foamy, pour the egg mixture in. Let eggs sit undisturbed for 10–15 seconds, then gently stir with a silicone spatula, folding from the edges into the center. Cook slowly, removing from heat when slightly underdone — the residual heat will finish them. This yields soft, creamy scrambled eggs (about 3–4 minutes).
Over-easy eggs
Heat a nonstick skillet over medium heat and add 1 tablespoon butter. Crack eggs into the pan (work in two batches if needed). Cook until whites are set but yolks still runny, about 2–3 minutes. Carefully flip each egg and cook 10–20 seconds more for over-easy. Season with a pinch of salt and pepper.
Assembly & Finish
Transfer the hot roasted tater tots to a serving platter or divide between 2 plates (servings listed below). Immediately sprinkle 1 cup shredded sharp cheddar evenly over the tots so it melts from the residual heat. If you prefer fully melted cheese, return to the oven for 1–2 minutes under the broiler while watching closely.
Drizzle about 1–2 tablespoons of sriracha mayo and 1–2 tablespoons of regular mayo over the eggs and tots, or serve sauces on the side. Garnish with thinly sliced green onions (about 3 scallions), scattering evenly.
Serve immediately while tots are hot and eggs are warm. Offer extra sriracha on the side.
