Rinse and soak

Rinse 1 cup long-grain white rice under cold water until the rinse runs clear. Place the rinsed rice, 1 tablespoon whole almonds (optional), 1 teaspoon ground cinnamon, and 4 cups water in a bowl or pitcher. Cover and let soak at room temperature for at least 3 hours or up to overnight in the refrigerator. Longer soaking yields creamier horchata.

Blend

After soaking, transfer the rice, almonds, cinnamon, and soaking liquid to a blender. Blend on high for 1 to 2 minutes, until the mixture is very smooth and milky. If your blender is small do this in batches.

Strain

Strain the blended mixture through a fine-mesh sieve lined with cheesecloth or a nut-milk bag into a large bowl or pitcher. Press or squeeze gently to extract as much liquid as possible. Discard or compost the solids (or reserve for baking).

Sweeten and finish

Whisk the strained horchata with 1 tablespoon granulated sugar (adjust to taste), 1 teaspoon vanilla extract, 1 cup whole milk (or plant milk), and 2 tablespoons sweetened condensed milk (optional). Taste and add more sugar or condensed milk if you prefer sweeter, creamier horchata. Chill the horchata base in the refrigerator for at least 30 minutes before assembling the drink.

Brew and cool coffee

Brew 1 cup of strong coffee or pull 1 shot (about 1/4 cup) of espresso and dilute to 1 cup with cooled strong coffee if desired. Allow the coffee to cool to room temperature or chill in the fridge. For a less bitter profile, use medium-roast coffee brewed slightly stronger than usual.

Assemble iced café con horchata

Fill two tall serving glasses with ice (about 1 cup ice per glass). Pour equal parts chilled horchata and cooled coffee into each glass (approximately 1/2 cup horchata + 1/2 cup coffee per glass) or adjust ratio to taste. Stir gently to combine.

Garnish and serve

Dust each drink with a light pinch of ground cinnamon (about 1/8 to 1/4 teaspoon total divided) and optionally add a cinnamon stick for garnish. Serve immediately with a straw.
