Cooking Shrimp
Sauté the Shrimp
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add Vegetables
Add the chopped onion, green bell pepper, and red bell pepper to the skillet. Cook for 3-4 minutes until the vegetables are slightly softened.
Cook the Shrimp
Add the shrimp to the skillet. Season with salt and black pepper. Sauté for 5-7 minutes or until the shrimp are pink and opaque. Remove from heat and set aside.
Preparing the Salad
Assemble the Salad
In a large serving bowl, place the torn lettuce as the base. Arrange the sliced avocado, diced tomato, and sliced cucumber on top of the lettuce.
Making the Dressing
Combine Dressing Ingredients
In a small bowl, whisk together lime juice, honey, salt, black pepper, and 2 tablespoons of olive oil until well combined.
Final Assembly
Combine and Serve
Top the salad with the sautéed shrimp and vegetables. Drizzle the dressing over the top. Gently toss the salad to combine before serving.
