Prepare the Prime Rib

Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, then season generously with salt, black pepper, garlic powder, and chopped rosemary.

Roast the Prime Rib

Place the seasoned prime rib on a rack in a roasting pan. Roast for 20 minutes in the preheated oven. Then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until a meat thermometer reads 130°F (54°C) for medium-rare.

Caramelize the Pearl Onions

While the roast is cooking, heat a skillet over medium heat. Add butter and pearl onions, cooking until the onions are golden brown and caramelized, about 15-20 minutes. Stir occasionally, adding a pinch of salt.

Make the Whiskey Jus

Once the prime rib is done, remove it from the oven and let it rest for at least 20 minutes. In the same skillet used for the onions, deglaze with whiskey, scraping up any browned bits. Add beef broth and bring to a simmer, reducing slightly for about 10 minutes.

Serve

Slice the prime rib and serve it with the caramelized pearl onions and drizzle the whiskey jus over the top.
