Preparation Steps
Prepare the Tortilla Bowls
Preheat your oven to 375°F (190°C). Press each flour tortilla into an oven-safe bowl or muffin tin to form a bowl shape. Bake for 10-12 minutes or until golden and crispy. Remove from the oven and let cool.
Mix the Salad Base
In a large mixing bowl, combine the local hydro greens, roasted sweet corn, and black beans. Toss gently to mix.
Assemble the Fiesta Salad
Once the tortilla bowls are cool, fill each bowl with the mixed salad base. Top with pico de gallo, shredded cheddar and jack cheeses, and drizzle with Laredo ranch dressing and fire roasted jalapeno salsa.
Finish and Serve
Add a dollop of sour cream on top of each salad bowl. Serve immediately and enjoy your Fiesta Salad!
