    Whisk eggs

    Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk until yolks and whites are fully combined and slightly frothy.

    Cook eggs

    Heat a nonstick skillet over medium-low heat and add 1 tablespoon butter. Once melted and foaming, pour the egg mixture into the pan. Let eggs sit undisturbed for 10–15 seconds, then gently stir with a silicone spatula, pushing cooked edges to the center. Continue to cook slowly, folding and stirring, until eggs are softly set but still moist, about 2–3 minutes. Remove from heat (they will continue to cook in residual heat) and set aside.

Vegetable mixture

    Sauté mushrooms and tomatoes

    While eggs are cooking (or beforehand), heat a small skillet over medium heat. Add 1 teaspoon olive oil. Add the sliced mushrooms and a pinch of salt and pepper. Sauté, stirring occasionally, until mushrooms release moisture and begin to brown, about 4–5 minutes. Add the halved cherry tomatoes (or diced tomato) and cook another 1 minute just to warm and soften—avoid overcooking so tomatoes keep texture.

    Wilt spinach

    Add 1 cup packed baby spinach to the skillet with mushrooms and tomatoes. Stir for 30–45 seconds until spinach wilts but remains bright green. Taste and adjust seasoning with a small pinch of salt and pepper. Remove the vegetable mixture from heat.

Assembly & finishing

    Toast muffin halves

    Spread 1 teaspoon butter lightly on the cut sides of both whole wheat muffin halves. Toast the muffin halves in a dry skillet or under a broiler until golden and crisp, about 1–2 minutes per side on a skillet or 1–2 minutes under broiler—watch carefully to avoid burning.

    Assemble sandwich

    Place one toasted muffin half on a plate. Layer half of the cooked eggs on the bottom half, followed by half of the sautéed vegetable mixture. Top with 1 ounce (about half) of sharp cheddar cheese and sprinkle with 1/2 tablespoon sunflower seeds. Add the remaining eggs on top of the cheese/veggies if you prefer extra egg, or place the top muffin half directly if you used all eggs already. Repeat for the second sandwich if making two servings.

    Melt cheese (optional)

    If you prefer melted cheese, return the assembled open-faced sandwich to the warm skillet (covered) for 30–60 seconds, or place under a broiler for 20–30 seconds until cheese softens and melts. Then top with the remaining muffin half.

    Cut sandwich in half if desired and serve immediately. Each sandwich should have a crunchy whole wheat muffin, warm egg, sautéed spinach, mushrooms, tomatoes, melted cheddar, and a nutty crunch from sunflower seeds.
