Fish and Marinade

Prepare the fish
Rinse the tilapia under cold water and pat dry with paper towels. If using whole fish, make 2-3 diagonal slashes on each side to allow marinade to penetrate.

Place the fish in a shallow dish. Sprinkle 2 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, and 2 tbsp lime juice evenly over the fish. Add 1 tsp hot sauce if using. Rub the marinade into the slashes (for whole fish) and into both sides of fillets. Let marinate for 20–30 minutes at room temperature or up to 1 hour in the refrigerator.

While the fish marinates, make the coating mixture: in a shallow wide bowl combine 1.5 cups all-purpose flour, 0.25 cup cornstarch, 1 tsp paprika, 0.5 tsp cayenne, 1 tsp onion powder, 1 tsp salt, and 0.5 tsp black pepper. Whisk to distribute spices evenly.

Set up a dredging station: the seasoned flour in the bowl and a rack or plate to hold coated fish. Pat any excess marinade off the fish before dredging so coating adheres well.

Dredge each piece of fish thoroughly in the flour mixture, pressing gently so the coating sticks. Shake off excess and place on a rack for 5 minutes — this helps the coating set and reduces splatter when frying.
Frying

Pour 4 cups vegetable oil into a deep skillet or heavy pot (oil should be about 1–1.5 inches deep). Heat over medium-high heat until oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle and float.

Working in batches to avoid overcrowding, carefully lower the coated fish into hot oil. For fillets, fry 3–4 minutes per side until golden brown and cooked through. For whole small tilapia, fry 4–6 minutes per side depending on size. Internal flesh should flake easily with a fork and reach 145°F (63°C).

Use a slotted spoon or spatula to remove fried fish and transfer to a paper towel–lined tray to drain. Keep finished fish in a warm oven (200°F / 95°C) while frying remaining batches to keep crisp.

After frying the fish, reserve about 1 tablespoon of the frying oil in a large skillet over medium heat. Add 1 tbsp butter and let it melt.

Add the sliced scallions and chopped cilantro; toss for 30 seconds to combine and remove from heat.

Arrange the fried tilapia on a serving platter and spoon the warm peppers and onions over and around the fish. Garnish with additional cilantro and lime wedges.

Serve immediately while the fish is hot and crispy. Recommended accompaniments: steamed rice, fried plantains, or a simple green salad.

Leftovers: store fish and vegetables separately in airtight containers in the refrigerator for up to 2 days. Reheat in a 375°F (190°C) oven for 8–10 minutes to help restore crispness.
